Moroccan Sfinge Donuts For Chanukah!
Tonight on the 8th and final night of Chanukah we enjoyed a Moroccan treat call sfinge, which are basically fried yeast donuts, and perfect for Chanukah, on account of all the oil that is needed to fry them, yikes. In case you are wondering about that cactus in the middle of the donuts, well that happens to be our sugar bowl (of sorts, it actually has a cover as well) and it was a great call by my daughter to place it in the dish as it makes the whole thing look so festive, right? If you ever come upon a little plastic container with a cactus that is meant…

How To Make Moroccan Mufleta Immediately After Passover: We Did It!
History has been made in our family,! For the first time ever we were able to pull off the beloved (by Moroccans and their non-Moroccan friends and neighbors) Moroccan tradition of making mufleta, and throwing a mini-Mimouna party, in our very own home. Wow, I almost can’t believe it! You see for years it was just me cleaning up in the kitchen as soon as Passover had ended, (around 8:30pm) and by the time everything was washed and packed up safely, before bringing any flour into the kitchen, well it was very late and I was not up for more cooking, especially when the family was already asleep! Nonetheless, I…

Moroccan Semolina Soup With Veggies Is Perfect Right Now!
Introducing semolina porridge, a simply delicious, quick to whip up, and somewhat exotic soup that is a bare pantry kind of recipe to boot! And dear readers, my version is Moroccan, (well, at least is was, until I decided to add some veggies to the basic recipe……) though I’m thinking other Meditteranean and North African cuisines may have something similar. I love soup of all kinds, though many soups really do need a few good hours on the stove to really taste their best. So soup may not be thought of as the kind of dish to whip up on a whim, but semolina porridge is indeed! Assuming you’ve got…

Lacto-Fermented Pickled Vegetables Are Healthy And Delicious!
Fermented foods like pickled vegetables, sourdough bread, kombucha tea, kefir and yogurt, to name a few, are all great ways to eat healthy pro-biotic foods in order to colonize your gut with good things. One of the interesting and really important things that I learned towards the end of 2016 is what a major role intestinal health plays in our overall health, and how oblivious traditional medicine is to this idea. If you or your loved ones are unfortunately dealing with health issues I highly highly recommend looking into the field of Functional Medicine that addresses the role that food plays regarding illness. That said, it turns out that my…

Moroccan Marinated Eggplant Slices Without The Frying!
We enjoy a variety of homemade Moroccan salads (okay, they aren't technically "salad" but that is what they are called in Hebrew) every week for shabbat, and while I have been making smoked Moroccan eggplant salad for years, I recently introduced a few more classic Moroccan eggplant salads to the repertoire, only I've managed to make them without frying. Moroccan cuisine often includes lots of oil, but it really doesn't have to. It is true, something fried can sometimes be mouth wateringly delicious, on the other hand, yuk, it can make you feel sick, no? Not ot mention the negative health effects. So, I introduce to you my version of…

Moroccan Matbucha Cooked Tomato Salad
Matbucha, said with a gutteral "ch" is a cooked tomato relish, that is cooked for many hours over a low flame, and whose recipe differs greatly depending on whom you ask! Here in Israel it is called a "salad" and is a universal dish eaten with challah at the shabbat table, together with an array of other salads (many other salads if you are Moroccan) that precede the fish course on Friday night. Since matbucha is actually of Moroccan origin, I'm going to go out on a limb and tell you that the recipe I use is the real thing, and truly the most delicious. My recipe didn't actually come…
